Tofu Steaks With Caramelized Onion Gravy
1 large block of extra-firm waterpack Tofu, frozen and thawed
1 tsp Liquid Smoke
1 Tbs steak sauce
1 Tbs soy sauce
1 tsp sugar or Sucanat
1/4 tsp garlic granules or powder
Salt and Pepper
Oil
Gravy (recipe follows)
In a ziplock bag, mix Liquid Smoke, steak sauce, soy sauce, garlic, and sugar. Gently press any water from thawed Tofu
block. Cut Tofu horizontally into thick slices. Put Tofu into bag. Marinate 1 - 3 hours, turning bag occasionally. Drain Tofu.
Coat a heavy frying pan with oil. Heat oiled pan over medium heat. Place marinated Tofu In oil, and brown on both sides,
adding more oil if needed. Put browned Tofu steaks on serving plates. Season with salt and pepper. Pour hot gravy over
steaks, and serve.
NOTE: Tofu steaks can also be grilled.
VARIATION: "Chicken-Fried Tofu Steak"
Dredge marinated Tofu in seasoned flour (can be rice flour). Shake off excess. Fry in oil until browned and crispy. Serve with
gravy.

Caramelized Onion Gravy
1 Tbs olive oil
1 large onion, peeled and thinly sliced
1 & 1/2 cups vegetable broth
2 tsp vegetable seasoning (Vegit, Spike, etc)
1/8 tsp sage
1/8 tsp tarragon
1/4 tsp chervil
Pinch of nutmeg
Salt and pepper
In a large skillet, heat oil on medium heat. Add onion slices, and saute` until onion begins to brown. Continue stir-frying over
medium heat until onions are a rich brown. Add broth and seasonings. Bring to a boil, and then turn down to medium-low
simmer. Cook until gravy is reduced to about 3/4 cup.
