Mix together:
8 medium potatoes, grated
1/2 lb. tofu, blended
1 large onion, grated
1/4 cup fresh parsley, chopped fine
1 tsp. salt
1/4 tsp. black pepper
1/2 tsp. garlic powder
3 Tbs. unbleached white flour

For each pancake, brush a 6" skillet with oil and heat to medium heat. Spoon about 3/4 cup of the potato mixture into the pan
and flatten to 3/8"-1/2" thick. Fry about 5-7 minutes on each side or until golden brown. Serve hot with applesauce on the
side, or top with tofu sour cream.
