1/4 cup cracked wheat
3/4 cup hot water
2 cups chopped parsley
1/4 cup chopped fresh mint
1/2 cup cucumber, peeled and diced
1 tomato, diced
2 scallions, sliced thin
3 Tbs lemon juice
3 Tbs oil
1/4 tsp salt
olives, optional

Soak wheat in hot water for about 15 minutes. Drain well, squeezing out all moisture.
Toss parsley, mint, cucuber, tomato, scallion, and soaked wheat together in a serving dish. Coat with lemon juice, oil and salt and mix well. Garnish with olives if desired. Can be chilled and served later. Serves 4.
