1 egg or 2 egg whites (can be omitted for vegan burgers)
1 cup finely chopped walnuts, raw cashews, or almonds
¼ cup cottage cheese or tofu
½ cup toasted wheat germ, whole wheat bread crumbs, or crushed crackers
1 clove garlic, minced
2 Tbs. sesame seeds
1 Tbs. parsley, chopped
1 Tbs. onion, chopped
1 tsp. soy sauce
¼ tsp. thyme leaves
¼ cup milk, dairy or non-dairy
1 Tbs. safflower oil
In a medium-size mixing bowl, combine ingredients except oil; mix well. Form mixture into patties, each ½" thick. In a large skillet, heat oil. Cook patties over medium heat on both sides until lightly browned, about 2 minutes on each side. Serves 4.
VARIATIONS: can be served on buns with lettuce, tomato slices, melted cheese, and ketchup. Or serve a tomato, curry, or peanut sauce. To make sloppy joes, omit the bread or cracker crumbs. Sauté mixture in skillet until lightly browned. Stir in ½ cup tomato sauce and heat. To make nut ball appetizers, form the mixture into walnut-sized balls. Sauté lightly or bake on a baking sheet at 350 degrees for 8 minutes until lightly browned. Serve with tomato, peanut or sweet and sour sauce (see below).

SWEET AND SOUR SAUCE
2 Tbs. cornstarch
¼ cup soy sauce
1-1/2 cup unsweetened pineapple juice
½ cup apple cider vinegar
¼ tsp. garlic powder
Combine in a saucepan over medium heat. Stir constantly until thickened.
