1 pound pepitas (pumpkin seed kernels)
3 Tbs. each lime juice and soy sauce
1 tsp. cumin
1/2 tsp. each black pepper, garlic powder, and thyme
12 oz whole-wheat chex-type cereal
Salt and cayenne pepper to taste

Preheat oven to 375 degrees. In a large mixing bowl or pot, combine pepitas, lime juice, soy sauce, and cumin. Toss to coat evenly. Add cereal and toss again.
Spread mixture out on a nonstick baking sheet. Spray lightly with oil and sprinkle with salt and cayenne, if desired. Bake 10-12 minutes, stirring halfway through, until toasty and lightly browned.
