I made this recipe a week or so ago and we both really liked it. I served it over vanilla ice cream and orange sherbet, but nondairy ice creams could be used as well. (Mocha Mix makes a yummy vanilla, as well as chocolate, and I think Rice Dream is also available in an ice cream.)
NOVEMBER COMPOTE
1 cup cranberries, coarsely chopped
3 small, sweet apples, peeled, chopped into 1/2" pieces
1/2 cup raisins
1 Tbs. all-purpose flour
1/4 cup firmly packed brown sugar
1/2 cup apple juice

Preheat oven to 375 degrees.
Lightly oil a 1-1/2 quart casserole or spray with a nonstick cooking spray.
In a medium bowl, combine cranberries, apples, and raisins. Add flour and brown sugar. Mix well. Place in prepared casserole. Stir in apple juice.
Cover and bake 35 minutes, until apples are tender. Stir once during cooking time.
Serve warm. Leftovers are also delicious cold. Makes 6 1/3-cup servings.
