½ cup clean raw cashews
½ cup water (more if necessary)
8 oz pimentos
6 Tbs. nutritional yeast
4 Tbs. arrowroot or cornstarch
2 Tbs. fresh lemon juice
1 tsp. onion powder
Water to total 4 cups
3 tsp. salt
¼ tsp. garlic powder

Blend cashews and hot water in blender. Add remaining ingredients and blend until smooth. Simmer until thick, stirring constantly (5-6 minutes).
Serve over potatoes, veggies, tortilla chips, etc. For fondue or a spread, increase cornstarch to 6 Tbs.
