PREHEAT OVEN TO 350

Cook: 3 c. potatoes, cubed
Mash with: cooking water or soy beverage
1 pkg, frozen spinach, thawed
1 T. Italian seasoning mixture
Spread on a 12x9" baking pan, a small amount from:
1 bottle fat free pasta sauce
Stuff the potato mixture in: 12 shells of uncooked manicotti
Place side by side in the baking dish. Pour remaining pasta sauce over the manicotti Cover with parchment paper and seal
with foil wrap.
Bake for 60 minutes
** another option is using lasagne noodles and rolling them up -- it's easier than filling the shells!!
