small or 3 medium zucchini
2 tsp. salt
2 Tbs. vegetable oil
4 green onions, sliced
½ tsp. minced garlic
½ to ¾ cup skim milk or soymilk
2 cups cooked wild rice
1 tsp. dried basil
Salt and pepper to taste
½ cup cubed mozzarella or soy cheese
2 Tbs. chopped parsley

Grate zucch9ini coarsely. Toss with salt and place in colander; allow to drain 30 minutes. Squeeze
out excess moisture. Heat oil in large skillet. Add grated zucchini, onions and garlic if desired;
sauté 3-4 minutes. Stir in milk or soymilk and wild rice. Simmer 3-4 minutes. Mix in basil, salt,
pepper and cheese. Heat through. Garnish with parsley. Serves 3 to 4.
