1 pkg. frozen hash brown potatoes
1 cup sour cream, dairy or non-dairy
Green onions, chopped
16 oz firm tofu
1 pkg. tofu scrambler seasoning mix
1 pkg. frozen burger crumbles, sausage style
1 pkg. American cheese slices, dairy or non-dairy

Brown potatoes and onions. Stir in sour cream and spread mixture in bottom of a 9"x12" pan.
Scramble tofu with seasoning mix according to directions. Spread on top of potatoes.
Place burger crumbles on top of tofu. Place cheese slices on top of burger crumbles.
Bake at 350 degrees for 45 minutes.
