1-1/4 cups water
1 cup rice flakes
1 egg, beaten
1/2 cup low-fat milk or soy milk
1/3 cup whole wheat flour
1/2 tsp. salt
1/2 tsp. baking powder
2 Tbs. soy margarine, melted
3/4 cup firmly packed grated Cheddar cheese

Preheat the oven to 400 degrees. Boil water in a heavy saucepan. Sprinkle in the rice flakes, lower the heat, and simmer for
5-8 minutes, or until the water is absorbed. In a mixing bowl, combine the cooked rice flakes with the remaining ingredients
and mix thoroughly. Pour the mixture into an oiled 9” pie pan. Bake for 20-25 minutes, or until the top is nicely browned.
Allow to cool somewhat, then cut into 4-6 wedges to serve. Serves 4 to 6.
