Vegetarian & Vegan Mochi Muffins

Recipe Ingredients
1 12-oz package mochi
Savory or sweet filling of choice

Preheat oven to 450 degrees or use toaster oven for baking small amounts. Cut mochi into 2-oz squares with a sharp knife,
or divide along the scored lines found on some brands. Place pieces of mochi on a baking sheet and bake for 10 minutes or
until mochi puffs up and becomes lightly browned and crisp on the outside. Remove from oven, cut open, and stuff with filling
of choice. Serves 6.

Avocado, tomato, and lettuce or sprouts

Nut butter and fruit-sweetened preserves
Dairy or soy cream cheese (or yogurt cheese) and chopped dates
Tahini-honey spread
Peanut butter and honey
Ricotta cheese mixed with minced, dried apricots and carob chips
Fresh fruit and homemade dairy or soy whipped cream
Dairy pudding or amazake pudding

PER SERVING without filling: 140 calories; 3 gm protein; 2 gm fat; 29 gm carb.; 2 mg sodium.
